Economy commercial size stove from early 1900s--need information please




We just bought a 1795 house that came with a early 1900 stove--the oven says economy. The stove has 6 burners and a griddle. The stove was well maintained but the oven was improperly vented (actually not vented and the wall was charred) and we would like some information about how to safely use it. We also do not know anything about when the stove was made, etc.
