For screws: what are the advantages of using Nickel plated steel on Zinc plated steel.

The basic difference is that zinc is anodic to steel and nickel is cathodic. So, in rough service where the hardware can be nicked and the coating scratched through, zinc will continue to protect it. Nickel is strictly barrier layer protection; once the coating is perforated the nickel accelerates rusting of the substrate instead of retarding it. Nickel also looks brighter, but is significantly more expensive.
