-----Welding between dissimilar metals
It is correct to make a continuous welding between a stainless steel and galvanized steel sheets?

This sounds like a VERY bad idea for a great many reasons.
Not least, galvanised sheet is never welded because of the zinc fumes which are given off, it also destroys the galvanising in the joint area. The mix of metals resulting from the proposed joint sounds like a corrosion nightmare.

Another reason why it is a VERY bad idea is that zinc rapidly embrittles austenitic stainless at high temperatures (as in welding & fires). The zinc penetrates grain boundaries and forms NiZn, sometimes causing catastrophic failures.
