What is difference between 18/10 and 9 ply surgical stainless steel




In process of buying cookware and would like to know the difference between 18/10 and 9 ply surgical stainless steel.

18/10 or 18-10 indicates an 18% Cr + 10% Ni stainless steel such as 304.

Some cookware has a highly conductive layer of aluminum or copper sandwiched between thin stainless steel outer layers, so can be considered 3-ply. 9 ply is meaningless unless further defined; maybe a bulletproof tire?

'Surgical stainless steel' is sales hype unless certified to a specification such as ASTM F138 or ISO 5832-1.
