Removing scratches and polishing stainless steel




I'm attempting to remove some scratches and polish the stainless steel on my old Plymouth but as I sand the parts with 320 sandpaper it appears I am removing some kind of coating on the surface, the metal polishes up very nicely but, I'm wondering if I am removing something that should remain on the surface, possibly some kind of sealant, it feather-edges very easily, but will it have an adverse effect on the metal down the road.

What is your reason to believe that these parts are stainless steel rather than plain steel with nickel-chrome plating that you are removing, Gary? What parts are they?
