Restoring cast aluminum engine parts

I am restoring a vehicle and am really wondering what and why it is that cast aluminum always leaves that black residue ? I have brushed it with a fine abrasive impregnated brush. I have brushed it with stainless steel. I realize that this must be some form of oxidation but how can it be prevented? I guess what I also need to know is whether to clearcoat for final finish or is there a better way?
