Metal finishes
I removed the powder coating on my stainless steel boat exhaust system and would like to know what to polish it to a fine shine with.

Removing that powder coating may not have been a good idea. Stainless steel can actually rust, depending on what grade it is, and how corrosive of an environment it is exposed to. The manufacturer of the exhaust system probably did not put that powder coating on there just for color.
I don't know what you should use to polish it up, but you may want to do something to make sure it doesn't rust up on you after a few years. You could either paint it, or try attaching a zinc anode to it somehow.
