Without masking, is it feasible to electroless nickel plate an assembly with 6000-series aluminum and other metals, such as copper & tin-silver solder? Generally, is there an engineering guide that would list what other metals (if any) that can be exposed when electroless nickel plating aluminum?

Different metals and alloys require different processing. The ones you mentioned are so different to each other that, in my opinion, it would be impossible to plate them together successfully and consistently. Galvanic and corrosion reactions take place as soon as they come in contact with the acid and alkaline pretreatment solutions causing all sort of problems.
