I would like to know if Zinc Plated items such as Grilling and Roasting Racks are safe for use on BBQ's
If Not, apart from Stainless Steel what would be the best plating to use for such BBQ racks and Utensils

I'd say they should be nickel plated. Not so much as a matter of safety but as a matter of durability. BBQs are hot enough to vaporize the zinc. Alternately, ceramic coated.
