What stainless steel mesh alloy should I use for frying?

I am a high school student designing a basket to be used for frying food at home in a standard pot. I am planning to use stainless steel mesh for the basket that is approximately .05 inches in diameter. I was wondering what stainless steel alloy would be the best to use for frying?
